Learn more about traditional Saj cooking
First used by the ancient nomadic people of Lebanon and the greater Middle East, traditional Saj cooking is a practice that has been passed down and perfected over hundreds of years. Combining fresh-off-the-grill flavour with a beautiful, soft texture, it has become a legendary dish around the world.
The name Saj actually comes from the large, shield-like iron plate that was once worn over the backs of travelling soldiers. Doubling as both protection in battle and a portable cooktop, the Saj would be placed over an open fire during downtime to quickly fry up flatbread and thin cuts of meat. Its domed shape perfectly allowed for air bubbles to be trapped in bread, creating the famously warm and light flavours that made tastebuds float - both then and now.
This practice spread globally, enduring almost unchanged to this day because of the lightness, versatility, and delicious flavour of Saj dishes. Even today, at Saj Sydney, we continue to preserve the authentic way of Saj. Because there is really no improvement to be made on that beautiful warmth that spreads through your mouth when you first bite into a traditional, freshly baked Saj dish.
